The original Pinot Gris wine was called "Tokay d'Alsace"
then "Tokay Pinot Gris", since the grape from which the wine was made was considered a variety of the Hungarian Tokay, which, in turn, goes back to the Furmint group. In fact, this Pinot hails from Burgundy and was known in Alsace as far back as the 17th century. The variety received the generalized name "Pinot Gris" quite recently - in 2007.
The vineyards are located mainly in the Schimberg commune, located in the valley of the town of Gebwiller. The soils of the plots are of volcanic origin, and the exposure of the vineyards is southern, due to which the berries receive maximum sunlight. After manual harvesting, the fruits are gently pressed using a pneumatic press.
This is followed by static cleaning of the wort under the influence of gravity. Fermentation takes place in temperature-controlled steel tankers for 1-4 months. Wine Pinot Gris "Les Princes Abbes" has a storage potential of 4-5 years.
